Bistora opened its doors on Rue de la Paix with a simple promise — bold flavors, honest ingredients, and a dining room that felt like home. Word spread fast, and within months every table was booked weeks in advance.

Riding the wave of sold-out evenings and glowing reviews, we expanded our kitchen team, launched a seasonal menu rotation, and opened our second location in the heart of the Old Port. The city had spoken — and we answered.

With a strong online presence, chef collaborations, and recognition from Montreal's top food guides, Bistora cemented its place in the city's dining scene. Now, we're planning to go beyond — new menus, new neighbourhoods, same bold soul.
